Soft and Chewy Ginger Molasses Cookies

Description

These soft and chewy molasses cookies are your perfect holiday cookies! You’ll love eating them with a glass of milk while watching a Christmas movie or bringing them to holiday parties!


Ingredients

  • 1 1/2 cups soft unsalted butter
  • 1 1/2 cup granulated sugar (+ extra for rolling)
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 2 eggs
  • 4 cups all-purpose flour
  • 3 tsp baking soda
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp salt

Instructions

  1. In your stand-up mixer, cream the butter, the granulated sugar and the brown sugar
  2. Add the molasses and the eggs, and mix until well combined
  3. Add two cups of flour, the baking soda, the ginger, the cinnamon, the salt, and finally, the other two cups of flour
  4. Cover the bowl with surround wrap and chill the dough for at least 30 minutes
  5. Preheat your oven to 375F and line your baking sheets with parchment paper
  6. Once your dough is chilled, form 2-tbsp-balls with the dough and roll them in the sugar before placing them on the baking sheets
  7. Bake the cookies for 8-10 minutes and let them cool on the baking sheet for a 3-5 minutes before moving them to a cooling rack
