Refined Sugar Free Banana Bread with a Peanut Butter Swirl

Description

This delicious banana bread is healthy and made with no refined sugars! Naturally sweetened with bananas and maple syrup, this bread is the perfect snack to warm you up on those cold winter days.


Ingredients

  • 4 bananas
  • 1/4 cup coconut oil (melted and cooled)
  • 3/4 cup pure maple syrup
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • natural peanut butter

Instructions

  1. Preheat your oven to 350F and line a loaf pan with parchment paper
  2. Mix the flours, baking soda and salt, and set aside
  3. Mash the bananas in a big bowl, and add the coconut oil, maple syrup, vanilla extract and the eggs
  4. Stir the dry ingredients into the wet mixture using a spatula
  5. Pour the batter into the loaf pan, and drop a few tsp of peanut butter on the top surface
  6. Using a knife, gently swirl the peanut butter into the batter
  7. Bake for 50-55 minutes (or until a toothpick comes out clean)
  8. Let the bread cool for 10-20 minutes in the pan before transferring to a cooling rack
  9. Enjoy warm as is or with some extra peanut butter!
