This winter has been B.R.U.T.A.L. This is my seventh year in Canada, and I think it might be the worst winter I’ve experienced so far. We’ve had lots of snow (and the sidewalks on my street don’t get plowed regularly π) and it’s been pretty cold. And let me tell you, I’m the kind of person who’s always cold, so with the weather we’ve been having for the past few weeks, I’ve literally been drinking an astronomical amount of tea to stay warm! Another thing I’ve been craving this winter are warm snacks. And what’s better than a warm piece of banana bread on a cold winter day?!
This healthy banana bread is refined sugar free, only sweetened by bananas (make sure to use ripe bananas) and some maple syrup. It is fluffy and moist, and pairs so well with the peanut butter swirl, which gives a little nutty flavour to the bread without being too peanut butter-y! (If you don’t like peanut butter or if you are allergic, just leave it out.)
This bread truly is a great snack for that mid-afternoon craving, or would even be great served warm for breakfast with maybe some extra peanut butter on top πEither way, I hope this banana bread will bring a bit of warmth in your home during this cold winter!

Description
This delicious banana bread is healthy and made with no refined sugars! Naturally sweetened with bananas and maple syrup, this bread is the perfect snack to warm you up on those cold winter days.
Ingredients
- 4 bananas
- 1/4 cup coconut oil (melted and cooled)
- 3/4 cup pure maple syrup
- 2 eggs
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- natural peanut butter
Instructions
- Preheat your oven to 350F and line a loaf pan with parchment paper
- Mix the flours, baking soda and salt, and set aside
- Mash the bananas in a big bowl, and add the coconut oil, maple syrup, vanilla extract and the eggs
- Stir the dry ingredients into the wet mixture using a spatula
- Pour the batter into the loaf pan, and drop a few tsp of peanut butter on the top surface
- Using a knife, gently swirl the peanut butter into the batter
- Bake for 50-55 minutes (or until a toothpick comes out clean)
- Let the bread cool for 10-20 minutes in the pan before transferring to a cooling rack
- Enjoy warm as is or with some extra peanut butter!
