Red Velvet Nutella Whoopie Pies with Cream Cheese Frosting

Description

Red velvet whoopie pies with a twist: hello Nutella! And of course, the pies are filled with a cream cheese frosting.


Ingredients

  • 1/2 cup soft unsalted butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg (RT)
  • 2/3 cup buttermilk (RT)
  • 1 tsp vanilla extract
  • 1/3 cup Nutella (slightly melted and brought back to RT)
  • 1 3/4 cup all-purpose flour
  • 1 tbsp cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • red gel food colouring
  • 6 oz. cream cheese (170g) RT
  • 1/4 cup soft unsalted butter
  • 2 cups icing sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven at 350F and line baking sheets with parchment paper
  2. For the cookies: cream together the butter and the sugars until fluffy
  3. Add the egg, buttermilk, vanilla extract and Nutella
  4. In a separate bowl, combine the flour, cocoa powder, baking powder and salt
  5. Add the dry ingredients to the wet ingredients
  6. Once fully incorporated, start adding the red gel food colouring until you reach the desired colour
  7. Scoop the dough onto the baking sheets and bake the cookies for 10-12 minutes. Let the cookies cool on the baking sheet for 5 minutes before moving them to a cooling rack
  8. For the frosting: using a hand-mixer or your stand-up mixer, cream together the cream cheese and the butter until smooth and fluffy
  9. Add the icing sugar 1/2 cup at a time
  10. Add the vanilla extract
  11. To assemble the whoopie pies: make sure your cookies are fully cooled before adding the cream cheese frosting and pair your cookies so they are about the same size
  12. On the flat side of one cookie, spread the cream cheese frosting and sandwich with the other paired cookie
  13. Store the whoopie pies in an airtight container in the fridge
