Description

Easy no-bake pumpkin spice energy bite recipe! The perfect healthy treat to enjoy during fall season.


Ingredients

Scale
  • 1/2 cup pumpkin purée
  • 1/2 cup peanut butter (or other nut butter of your choice)
  • 1/4 cup maple syrup (or honey)
  • 1 tsp vanilla
  • 1 cup oats
  • 1/2 cup pretzels
  • 23 tbsp chia seeds
  • 3 tbsp walnut pieces (or pecans)
  • 1/2 tsp pumpkin spice
  • 1/4 cup dark chocolate chips

Instructions

  1. In a blender, mix the oats, pretzels, chia seeds, walnuts and pumpkin spice. Set aside
  2. In a large bowl, mix well the pumpkin purée, peanut butter, maple syrup and vanilla extract
  3. Add the dry ingredients to the wet ingredients and combine everything together until you obtain a smooth consistency
  4. Fold in the chocolate chips
  5. Using the palms of your hands, form about 15 balls (using ~1.5-2 tbsp of dough/ball)
  6. Store them in an airtight container in the fridge for up to 2 weeks and enjoy whenever you want 🙂
