Let’s start this week off right with a healthy snack recipe for once! Don’t get me wrong, I love sugar, chocolate and all the don’t-look-at-the-calories treats. But I also do my best to have a balanced diet. That’s when these delicious pumpkin spice energy bites come in. I have a sweet tooth and often want something sweet after lunch or in the middle of the afternoon. And what’s better than a bite-sized treat to satisfy my cravings! Honestly, the perfect snack.
Since it is fall season (aka pumpkin season), I decided to make these energy bites using pumpkin purée. There is also some peanut butter (which is personally my favourite nut butter to use but feel free to use any other kind!), maple syrup for a little bit of sweetness and vanilla extract. For the dry ingredients, it is a mix of oats, pretzels (for a hint of salt), chia seeds, walnuts and of course pumpkin spice. I blended all of them together before adding to the wet ingredients to obtain a smoother consistency. Finally, let’s not forget the dark chocolate chips folded in at the end. The perfect addition 😉
As you can see from the picture below, Sadie desperately wanted a bite of them. Probably because she could smell the peanut butter and well, that’s her favourite thing in the whole wide world. Unfortunately for her, she didn’t get to try them because of the chocolate chips… Oh well, more for me!

Description
Easy no-bake pumpkin spice energy bite recipe! The perfect healthy treat to enjoy during fall season.
Ingredients
- 1/2 cup pumpkin purée
- 1/2 cup peanut butter (or other nut butter of your choice)
- 1/4 cup maple syrup (or honey)
- 1 tsp vanilla
- 1 cup oats
- 1/2 cup pretzels
- 2–3 tbsp chia seeds
- 3 tbsp walnut pieces (or pecans)
- 1/2 tsp pumpkin spice
- 1/4 cup dark chocolate chips
Instructions
- In a blender, mix the oats, pretzels, chia seeds, walnuts and pumpkin spice. Set aside
- In a large bowl, mix well the pumpkin purée, peanut butter, maple syrup and vanilla extract
- Add the dry ingredients to the wet ingredients and combine everything together until you obtain a smooth consistency
- Fold in the chocolate chips
- Using the palms of your hands, form about 15 balls (using ~1.5-2 tbsp of dough/ball)
- Store them in an airtight container in the fridge for up to 2 weeks and enjoy whenever you want 🙂
