Peanut Butter Crunch Energy Bites

Description

Simple peanut butter crunch energy bite recipe. This healthy snack is ready in no time, and perfect to eat before a workout or for an energy boost in the afternoon!


Ingredients

Scale
  • 3/4 cup quick oats
  • 1/3 cup pretzels
  • 3/4 cup natural peanut butter
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla
  • 3 tbsp chopped peanuts
  • 2 tbsp mini dark chocolate chips

Instructions

  1. In a food processor, blend slightly the oats and pretzels together (you still want tiny pieces of pretzels left). Set aside
  2. In a bowl, mix together the peanut butter, maple syrup, vanilla extract
  3. Add the oats and pretzels blend, as well as the chia seeds
  4. Fold in the chopped peanuts and mini dark chocolate chips
  5. Roll ~ 2 tbsp of dough in between the palm of your hands to form balls
  6. Store the peanut butter crunch energy bites in an airtight container for up to two weeks [if they even last that long πŸ˜‰ ]
