Can you believe it is already the last week of January?! This month flew by! It’s definitely been a busy month with the start of a new job, and finding the right balance between work, working out, going to the dog park (it is a daily activity for us, even in the -25C weather we’ve been having 🥶) and having a bit of a social life. But I think we are starting to establish a good routine.
This month has also made me realize that meal prepping on the week-end is now a must! I don’t have time during the week to prepare lunches for the new day and don’t want to spend an hour in the kitchen preparing supper either. So spending a few hours on Sundays preparing food for the week and making healthy snacks (to avoid the junk food temptations) has been important to me. Today, I am sharing with you the recipe of the snack I have been eating every day for the past two weeks: my peanut butter crunch energy bites.
I love soft energy bites but sometimes I need that crunch that tells my brain I am actually eating and chewing something. Here comes in this simple peanut butter energy bite recipe with some staple pantry ingredients and an added crunch from pretzels, chopped peanut and of course, mini dark chocolate chips. It will only require 10 minutes of your time to make a batch today, and your future-self will thank you all week long for preparing this little healthy snack and help fight that afternoon slump!

Description
Simple peanut butter crunch energy bite recipe. This healthy snack is ready in no time, and perfect to eat before a workout or for an energy boost in the afternoon!
Ingredients
- 3/4 cup quick oats
- 1/3 cup pretzels
- 3/4 cup natural peanut butter
- 1/4 cup pure maple syrup
- 1 tsp vanilla
- 3 tbsp chopped peanuts
- 2 tbsp mini dark chocolate chips
Instructions
- In a food processor, blend slightly the oats and pretzels together (you still want tiny pieces of pretzels left). Set aside
- In a bowl, mix together the peanut butter, maple syrup, vanilla extract
- Add the oats and pretzels blend, as well as the chia seeds
- Fold in the chopped peanuts and mini dark chocolate chips
- Roll ~ 2 tbsp of dough in between the palm of your hands to form balls
- Store the peanut butter crunch energy bites in an airtight container for up to two weeks [if they even last that long 😉 ]
