Maple and Pecan Granola

Description

Easy maple and pecan granola recipe without any refined sugar! Perfect to eat with milk or yogurt for breakfast or a snack.


Ingredients

  • 2 1/2 cups rolled oats
  • 1 cups pecan halves (100g)
  • 1 tbsp chia seeds + 3 tbsp water
  • 1/4 cup natural peanut butter
  • 1/3 cup maple syrup
  • 2 tbsp coconut oil
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 tsp maple extract

Instructions

  1. Preheat your oven to 325F and line a baking sheet with parchment paper
  2. Combine the chia seeds with the water and set aside
  3. Mix the oats with the pecans and set aside
  4. In a separate bowl, combine the maple syrup, peanut butter, coconut oil, salt, and the vanilla and maple extracts
  5. Add the wet mixture to the dry ingredients and mix with a silicone spatula
  6. Spread the mixture on the baking sheet and bake for 35-40 minutes (after 15-20 minutes, you’ll want to flip your granola with a big spatula to avoid breaking the clusters too much)
  7. Let the granola cool down completely before storing it in a airtight container
  8. Enjoy!
