Easy maple and pecan granola recipe without any refined sugar! Perfect to eat with milk or yogurt for breakfast or a snack.

- 2 1/2 cups rolled oats
- 1 cups pecan halves (100g)
- 1 tbsp chia seeds + 3 tbsp water
- 1/4 cup natural peanut butter
- 1/3 cup maple syrup
- 2 tbsp coconut oil
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 tsp maple extract
Instructions
- Preheat your oven to 325F and line a baking sheet with parchment paper
- Combine the chia seeds with the water and set aside
- Mix the oats with the pecans and set aside
- In a separate bowl, combine the maple syrup, peanut butter, coconut oil, salt, and the vanilla and maple extracts
- Add the wet mixture to the dry ingredients and mix with a silicone spatula
- Spread the mixture on the baking sheet and bake for 35-40 minutes (after 15-20 minutes, you’ll want to flip your granola with a big spatula to avoid breaking the clusters too much)
- Let the granola cool down completely before storing it in a airtight container
