Coffee Chocolate Chip Blondies

Description

These coffee chocolate chip blondies are so easy to make! The brown butter adds a nutty flavour to these amazing buttery coffee-y chocolatey bars that you won’t want to share. They obviously are a great treat to pair with your mid-day cup of coffee.


Ingredients

  • 1/2 cup + 1 tbsp (128g) unsalted butter
  • 3/4 cup (120g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (150g) all-purpose flour
  • 2 tsp ground coffee
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (95g) semi-sweet (or dark) chocolate chip cookies

Instructions

  1. Preheat the oven to 350F and line a 9×9 inch pan with parchment paper.
  2. Brown butter: in a saucepan, melt the butter on medium heat. Once fully melted, let the butter bubble and foam. I like to stir the butter with a spatula during the process to make sure the milk solids don’t stick at the bottom of the pan and burn. Once the butter has a golden brown colour and nutty smell, remove it from the heat and stir for another minute. Then transfer it into a heat-proof dish and let it cool.
  3. In a large bowl, combine the brown butter, brown sugar and granulated sugar. Once combined, add the egg and the vanilla extract.
  4. To the same bowl, add all at once the flour, ground coffee, baking powder and salt. With your spoon, slightly mix the dry ingredients together before folding them in the wet ingredients.
  5. Fold in the chocolate chips and transfer the dough to the baking pan. Since the dough is thick, you will need to spread it and flatten it with your spatula.
  6. Bake for 18-20 minutes – you want the blondies to look a little under-baked in the middle because they will continue baking in the pan once out of the oven. Let the blondies cool in the pan for ~10 minutes before transferring to a cooling rack.

Notes

If you are using a 8×8 inch pan, you’ll need to bake the blondies slightly longer as they will be thicker.
