Happy Monday! If you are like me, Monday mornings can be rough. After late nights and sleeping in on the weekend, I always struggle to get out of bed on Monday mornings. But today I am sharing a recipe with you that might make your mornings a little sweeter and give you a little boost of energy. Say hello to these coffee chocolate chip blondies!
If you don’t know what blondies are, let me introduce you. Blondies are essentially white brownies as you substitute the cocoa for vanilla. I see blondies almost as a cookie baked like a brownie. You will find some cakey blondie recipes out there but that is not the case with this recipe. These coffee chocolate chip brownies are crispy on the outside, and soft and slightly gooey inside. Plus, they are made with brown butter for added flavour. SO GOOD and the perfect addition to your morning (or mid-day) cup of coffee!
INGREDIENTS YOU WILL NEED TO MAKE THIS COFFEE CHOCOLATE CHIP BLONDIE RECIPE:
- Butter: butter is a key ingredient in this recipe as we turn it into brown butter for some extra delicious flavour.
- Brown sugar: I love the molasses flavour that comes out of brown sugar, and the softness and moisture it adds to baked goods.
- Granulated sugar: here the granulated sugar makes the outside of the blondies slightly crispy.
- All-purpose flour: I used regular all-purpose flour and have not tested any other so I wouldn’t recommend any substitutions.
- Ground coffee: coffee is our second key ingredient. I only used ground coffee to keep this recipe as simple and quick as possible (versus using brewed coffee). You could also use ground espresso but I would recommend using only 1-1.5 teaspoon as it is a little more intense in flavour.
- Chocolate chips: you will need semi-sweet or dark chocolate chips for this recipe, or you could just chopped your favourite chocolate bar!
- Other ingredients: egg, vanilla extract, baking powder, salt.
HOW TO MAKE BROWN BUTTER:
Browning butter consists of melting butter, reducing its water content and browning the milk solids, which gives a nutty toffee flavour to the butter. It’s honestly amazing and totally worth the 5 minutes it adds to this recipe!
in a saucepan, melt the butter on medium heat. Once fully melted, let the butter bubble and foam. I like to stir the butter with a spatula during the process to make sure the milk solids don’t stick at the bottom of the pan and burn. Once the butter has a golden brown colour and nutty smell, remove it from the heat and stir for another minute. Then transfer it into a heat-proof dish and let it cool.
HOW TO MAKE THESE COFFEE CHOCOLATE CHIP BLONDIE BARS:
I tried to keep this recipe as easy and dish-less as possible so all you need are a saucepan to make the brown butter, one bowl to combine all the ingredients, and a baking pan to bake the blondies!
Preheat the oven to 350F and line a 9×9 inch pan with parchment paper. In a large bowl, combine the brown butter, brown sugar and granulated sugar. Once combined, add the egg and the vanilla extract. To the same bowl, add all at once the flour, ground coffee, baking powder and salt. With your spatula / wooden spoon, slightly mix the dry ingredients together before folding them in the wet ingredients. Fold in the chocolate chips and transfer the dough to the baking pan. Since the dough is thick, you will need to spread it and flatten it with your spatula.
Bake for 18-20 minutes – you want the blondies to look a little under-baked because they will continue baking in the pan once out of the oven. Let the blondies cool in the pan for ~10 minutes before transferring to a cooling rack. Enjoy slightly warm with a cup of coffee!
HOW TO STORE THESE BLONDIES:
Once the blondies are cut, the sides can dry out fast. So don’t leave them out too long. As soon as the blondies are fully cooled, cut them in 16 squares (or 9 if you want bigger portions) and store them in an airtight container. They are fine to leave on the counter for up to 5 days.

- 1/2 cup + 1 tbsp (128g) unsalted butter
- 3/4 cup (120g) brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (150g) all-purpose flour
- 2 tsp ground coffee
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (95g) semi-sweet (or dark) chocolate chip cookies
Instructions

Notes
If you are using a 8×8 inch pan, you’ll need to bake the blondies slightly longer as they will be thicker.
