Chocolate Chip Pumpkin Bread

Description

Enjoy a warm slice of this healthier chocolate chip pumpkin bread with a warm cup of coffee or tea! This pumpkin bread will make your house smell like Fall!


Ingredients

  • 1 cup pumpkin purée
  • 3/4 cup real maple syrup
  • 1/3 cup coconut oil
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 1 tsp pumpkin spice (or 2 tsp if you want a stronger flavour!)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven at 350F
  2. Mix together the pumpkin purée, maple syrup, coconut oil, eggs and vanilla extract
  3. In another bowl, mix the flours, pumpkin spice, baking soda, baking powder and salt
  4. Add the dry ingredients to the wet mixture
  5. Fold in the chocolate chips
  6. Transfer the batter to a greased loaf pan and bake for 50 minutes (or until a toothpick comes out clean)
  7. Let it cool a bit and enjoy!
