Banana Chocolate Chip Baked Oatmeal

Description

This healthy banana chocolate chip baked oatmeal is perfect for meal prep and makes a great quick breakfast!


Ingredients

  • 1 cup (215g) mashed ripe bananas (~2 medium bananas)
  • 2 tbsp coconut oil, melted and cooled
  • 1/4 cup (80g) pure maple syrup
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 1 3/4 cups (450g) 2% milk
  • 2 1/2 cups (250g) rolled oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup dark or semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350F and line an 8×8 inch pan with parchment paper.
  2. In a large bowl, mash the bananas with a whisk. Add in the coconut oil, maple syrup, eggs and vanilla extract. Whisk until all the ingredients are combined.
  3. Whisk in the milk until smooth.
  4. Add in the rolled oats, baking powder and salt. Finally, fold in the chocolate chips.
  5. Transfer the oat mixture to the pan and bake for 40 minutes or until the edges and top are golden brown.
  6. Let the banana chocolate chip baked oatmeal cool for a bit, cut it in 9 squares and serve! Or store it in an airtight container in the fridge.

Notes

You can also bake this banana baked oatmeal in a 9×9 inch pan. Just reduce your baking time to 35 minutes or until the edged and the top are golden brown.
