This healthy banana chocolate chip baked oatmeal is perfect for meal prep and makes a great quick breakfast!
I love to share with you on the blog recipes I actually make on a regular basis, and this banana chocolate chip baked oatmeal is one of them! During the week, I try to eat healthier breakfasts but I am also usually in a rush so meal prepping is key. This banana baked oatmeal is an easy and quick recipe to prepare ahead of time, is healthier and filling, and delicious!
WHAT IS BAKED OATMEAL?
Baked oatmeal consists of baking oats in the oven in a custard like mixture rather than cooking the oats on the stove in water or milk. Baked oatmeal is soft, moist and makes a delicious healthy breakfast! I personally love making it for meal prep as it can be stored in the fridge for a few days and reheats well.
INGREDIENTS YOU WILL NEED TO MAKE THIS BANANA CHOCOLATE CHIP BAKED OATMEAL:
- Bananas: this recipe calls for ripe bananas. It helps sweeten the baked oatmeal and give a nice texture and flavour.
- Maple syrup: in addition to the bananas, I used maple syrup to naturally sweeten this baked oatmeal. You could substitute for honey instead (I haven’t tried it myself though so let me know in the comments if you try!)
- Coconut oil: I prefer to use coconut oil in baked goods but olive oil or vegetable oil would work too although it could slightly affect the flavour.
- Eggs: they help bind everything together and give that more custard like texture.
- Milk: this recipe calls for 2% milk.
- Rolled oats: this is the base ingredient of this recipe. You can use regular rolled oats or gluten free rolled oats.
- Chocolate chips: I love to add chocolate chips to basically anything! In this recipe it just adds something a little extra and who doesn’t love chocolate chips in their breakfast?!
- Others: vanilla extract, baking powder, salt.
Note: if you would like to keep this recipe dairy-free, you can substitute the milk for a plant-based milk like almond milk and make sure to use dairy-free chocolate chips.
CAN I USE ANY TYPE OF OATS:
No, I would not recommend trying this recipe with quick oats or steel cut oats. Every type of oats requires different moisture level and baking time. So using quick or steel cut oats will affect the texture of this banana baked oatmeal.
HOW TO MAKE BANANA BAKED OATMEAL:
This easy banana baked oatmeal recipe only requires one bowl and 15 minutes of your time to prepare! First, preheat the oven to 350F and line an 8×8 inch pan with parchment paper (or grease well to prevent sticking).
In a large bowl, mash the bananas with a whisk. Add in the coconut oil, maple syrup, eggs and vanilla extract. Whisk until all the ingredients are combined. Then, whisk in the milk until smooth. Add in the rolled oats, baking powder and salt. Finally, fold in the chocolate chips.
Transfer the oat mixture to the pan and bake for 40 minutes or until the edges and top are golden brown. Let the banana chocolate chip baked oatmeal cool for a bit, cut it in 9 squares and serve!
HOW TO STORE & REHEAT BANANA CHOCOLATE CHIP BAKED OATMEAL:
To store in the fridge: once cooled, you can store this banana baked oatmeal in an airtight container in the fridge for 4-5 days. When you are ready to eat, you can reheat it for about 30 seconds in the microwave.
To store in the freezer: once cooled, you can individually wrap your slices in plastic wrap and place them in a freezer ziploc bag. The baked oatmeal can be stored in the freezer for up to 3 months. When you are ready to eat, take a slice out of the freezer, unwrap it and reheat it in the microwave for a minute or two.

- 1 cup (215g) mashed ripe bananas (~2 medium bananas)
- 2 tbsp coconut oil, melted and cooled
- 1/4 cup (80g) pure maple syrup
- 2 eggs, room temperature
- 1 tsp vanilla extract
- 1 3/4 cups (450g) 2% milk
- 2 1/2 cups (250g) rolled oats
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup dark or semi-sweet chocolate chips
Instructions
- Preheat the oven to 350F and line an 8×8 inch pan with parchment paper.
- In a large bowl, mash the bananas with a whisk. Add in the coconut oil, maple syrup, eggs and vanilla extract. Whisk until all the ingredients are combined.
- Whisk in the milk until smooth.
- Add in the rolled oats, baking powder and salt. Finally, fold in the chocolate chips.
- Transfer the oat mixture to the pan and bake for 40 minutes or until the edges and top are golden brown.
- Let the banana chocolate chip baked oatmeal cool for a bit, cut it in 9 squares and serve! Or store it in an airtight container in the fridge.
Notes
You can also bake this banana baked oatmeal in a 9×9 inch pan. Just reduce your baking time to 35 minutes or until the edged and the top are golden brown.
