During these times of uncertainties, it seems like a lot of people have been bonding over food. For me baking has been a way of keeping busy and also getting my mind off of everything that’s happening in the world right now. I know your trips to the grocery stores are limited at the moment and perhaps you can’t find any flour (took me two weeks to find some!), so I’ve listed below 18 easy pantry dessert recipes. Most recipes only require pantry staple ingredients like these soft chocolate chip cookies, and others have very few ingredients and require no flour like these healthy peanut butter cups!
I’ve included a wide variety of recipes from cookies, all things chocolate, anything banana and breakfast goodies. Chocolate chip cookies are a classic. You definitely can’t go wrong with these soft, pillowy chocolate chip cookies! The recipe is straight forward and doesn’t require any chilling time, so you can have warm chocolate chip cookies in no time.
BROWN BUTTER CHOCOLATE CHIP COOKIES
Have you tried brown butter yet? If not, now is the time! Brown butter requires a little more time but the extra steps are so worth it. It gives a nutty flavour to the cookies and makes them extra delicious! You will need to chill the dough for this recipe so make it on a day you have the patience to wait for a cookie 😉
Do you still have halloween candy lying around? I do 😬 I love using my leftover M&M’s in these soft M&M’s cookies. I’ve already made these cookies during this quarantine and they were gone in no time! If you don’t have M&M’s, no need to go to the grocery store – try using some other candy/chocolate you already have.
These cookie dough energy bites are ready in no time and are a great healthier snack for that afternoon slump. Being home all day, the snack cravings have been real for me. It’s nice to have a healthier bite size snack option too.

This mini salted caramel and white chocolate cookie skillet is perfect to share for an at home date night with your SO or to devour all by yourself during a movie night! If you are like me, your chocolate cravings have been off the charts lately! I do have a remedy. My gooey gooey brownies! I can’t get enough of them. They never disappoint and are perfect to curb that chocolate craving. Go make them!

This is my all time favourite banana bread! It’s one of the first recipes I’ve shared on this blog and it just doesn’t get old. This banana bread is perfect for breakfast, snacking or dessert! And feel free to add chocolate chips to it 🙂
VEGAN BANANA CHOCOLATE CHIP MUFFINS
If you have ripe bananas but no eggs, you should give these vegan banana muffins chocolate chip muffins. I love making them for meal prep and having them as my breakfast all week long. Oh, and I highly recommend putting your muffin in the microwave a few seconds before eating it so that the chocolate chips melt a bit!

REFINED SUGAR FREE BANANA BREAD WITH PEANUT BUTTER SWIRL
My favourite combo with banana is peanut butter! This banana bread is refined sugar free and and the peanut butter swirl gives a crispy peanut buttery crust. Of course, add more PB on your slice before eating it!

PUMPKIN CHOCOLATE CHIP PANCAKES
I know it isn’t pumpkin season, but perhaps you have a can of pumpkin purée at the back of your cupboard. Pumpkin purée is a great non-perishable canned item to always have in your pantry. It’s perfect for pasta sauces, breads, muffins, energy bites or for a glorious stack of pumpkin chocolate chip pancakes!
COCONUT CHOCOLATE CHIP PANCAKES
This is my go-to pancake recipe! These coconut-y pancakes are so fluffy inside and crispy on the outside. They come together in no time and you can replace the chocolate chips with anything you want. In my (obviously non-bias) opinion, these coconut pancakes are the ultimate everyday quarantine breakfast!
This maple and pecan granola is my favourite granola recipe. It is quite easy to make and is perfect accompanied with milk or yogurt, or as a smoothie bowl topping!
HEALTHY LEMON BLUEBERRY MUFFINS
While we are all stuck inside, let’s not forget Spring is here! So brighten your day with these lemon blueberry muffins. High in protein thanks to greek yogurt, these fluffy muffins make a great breakfast!
