Today is officially the start of my holiday cookie week! Every day this week I will be sharing a new cookie recipe on the blog. I’m super excited about it because some of these cookie recipes are some of my new personal favourites. So I hope you will love them as much as I do!
So let’s start with these ginger molasses cookies. I think I’ve only discovered these cookies when I moved to Canada a little over 6 years ago. My family has more of a chocolate chip cookie addiction, so these were definitely not our go-to cookies.
What I love about these ginger molasses cookies is how chewy and soft they are. Every time I eat them, they remind me of bakery-style cookies. I’ve also found the right balance of ginger and cinnamon for me. Confession time: when I was younger cinnamon was my worst enemy haha! Both my mom and I have a radar and can taste even the smallest amount of cinnamon. However, living in Canada has basically forced me to semi-like cinnamon. I wouldn’t bake with it alone, but when it is mixed with other spices and not overly powerful, I actually enjoy it.
These cookies will require a tiny bit of patience, as you have to chill the dough for at least 30 minutes. But it is worth it! If you are really in a rush you could skip the chilling, but the cookies won’t be as chewy. So plan ahead and chill your dough!!

Soft and Chewy Ginger Molasses Cookies

Description
These soft and chewy molasses cookies are your perfect holiday cookies! You’ll love eating them with a glass of milk while watching a Christmas movie or bringing them to holiday parties!
Ingredients
- 1 1/2 cups soft unsalted butter
- 1 1/2 cup granulated sugar (+ extra for rolling)
- 1/2 cup brown sugar
- 1/2 cup molasses
- 2 eggs
- 4 cups all-purpose flour
- 3 tsp baking soda
- 2 tsp ginger
- 1 tsp cinnamon
- 1 tsp salt
Instructions
- In your stand-up mixer, cream the butter, the granulated sugar and the brown sugar
- Add the molasses and the eggs, and mix until well combined
- Add two cups of flour, the baking soda, the ginger, the cinnamon, the salt, and finally, the other two cups of flour
- Cover the bowl with surround wrap and chill the dough for at least 30 minutes
- Preheat your oven to 375F and line your baking sheets with parchment paper
- Once your dough is chilled, form 2-tbsp-balls with the dough and roll them in the sugar before placing them on the baking sheets
- Bake the cookies for 8-10 minutes and let them cool on the baking sheet for a 3-5 minutes before moving them to a cooling rack
