On Day 2 of Cookie Week, I am sharing with you my red velvet Nutella whoopie pie recipe!
For a long time, I was wondering what special ingredient was used in red velvet cakes. And recently, I found out that red velvet cakes are just a big LIE! I mean it is just a chocolate cake… with red dye. The two key ingredients in a red velvet cake are cocoa powder and buttermilk. The name “red velvet” originates from the reaction between the two, which brings out the red colouring of cocoa. Red dye is typically added to enhance the red colour of the cake.
The red velvet cookies in this recipe have a little spin on them compared to classic red velvet recipes as I used both cocoa powder and Nutella. I’m a huge Nutella addict, which means I love all things Nutella. I really wanted to have at least one recipe this week that included this delicious spread, and red velvet cookies seemed like the way to go!
While the cookies are soft, pillowy goodness and great to eat by themselves, the cream cheese frosting takes them to the next level! I usually give my batches of cookies to my boyfriend from him to share with his co-workers but these cookies never made it out of the house! We ate them all 🙃 So basically, you should get all the ingredients for these cookies on your way home from work today and make them tonight!

Red Velvet Nutella Whoopie Pies with Cream Cheese Frosting

Red velvet whoopie pies with a twist: hello Nutella! And of course, the pies are filled with a cream cheese frosting.
Ingredients
- 1/2 cup soft unsalted butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg (RT)
- 2/3 cup buttermilk (RT)
- 1 tsp vanilla extract
- 1/3 cup Nutella (slightly melted and brought back to RT)
- 1 3/4 cup all-purpose flour
- 1 tbsp cocoa powder
- 2 tsp baking powder
- 1/2 tsp salt
- red gel food colouring
- 6 oz. cream cheese (170g) RT
- 1/4 cup soft unsalted butter
- 2 cups icing sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven at 350F and line baking sheets with parchment paper
- For the cookies: cream together the butter and the sugars until fluffy
- Add the egg, buttermilk, vanilla extract and Nutella
- In a separate bowl, combine the flour, cocoa powder, baking powder and salt
- Add the dry ingredients to the wet ingredients
- Once fully incorporated, start adding the red gel food colouring until you reach the desired colour
- Scoop the dough onto the baking sheets and bake the cookies for 10-12 minutes. Let the cookies cool on the baking sheet for 5 minutes before moving them to a cooling rack
- For the frosting: using a hand-mixer or your stand-up mixer, cream together the cream cheese and the butter until smooth and fluffy
- Add the icing sugar 1/2 cup at a time
- Add the vanilla extract
- To assemble the whoopie pies: make sure your cookies are fully cooled before adding the cream cheese frosting and pair your cookies so they are about the same size
- On the flat side of one cookie, spread the cream cheese frosting and sandwich with the other paired cookie
- Store the whoopie pies in an airtight container in the fridge
