Hi friends! Today I am sharing with you my maple and pecan granola. This recipe is super simple and quick to make -> basically the ideal recipe for meal prep Sundays!
If you read my previous blog post, you may know that I am trying to stay away from refined sugar this month and it is not easy to find great snacks or quick breakfasts that don’t contain refined sugar. This led me to make my own granola. Plus, I just started a new job and having granola ready in the morning for a quick breakfast or in the afternoon for a snack has been a life saviour. I literally have made 3 batches of this maple and pecan granola in the last two weeks!
This granola is made with oats, pecans, chia seeds, peanut butter, coconut oil and is naturally sweetened by maple syrup. The chia seeds/water mixture and the peanut butter both help create big clusters. I’ve been loving eating this granola with milk or with homemade yogurt! I got an Instant Pot for Christmas and had to try making yogurt in it. It turned out pretty good! I just need to experiment a little more before I can share the recipe on here 😊

Description
Easy maple and pecan granola recipe without any refined sugar! Perfect to eat with milk or yogurt for breakfast or a snack.
Ingredients
- 2 1/2 cups rolled oats
- 1 cups pecan halves (100g)
- 1 tbsp chia seeds + 3 tbsp water
- 1/4 cup natural peanut butter
- 1/3 cup maple syrup
- 2 tbsp coconut oil
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 tsp maple extract
Instructions
- Preheat your oven to 325F and line a baking sheet with parchment paper
- Combine the chia seeds with the water and set aside
- Mix the oats with the pecans and set aside
- In a separate bowl, combine the maple syrup, peanut butter, coconut oil, salt, and the vanilla and maple extracts
- Add the wet mixture to the dry ingredients and mix with a silicone spatula
- Spread the mixture on the baking sheet and bake for 35-40 minutes (after 15-20 minutes, you’ll want to flip your granola with a big spatula to avoid breaking the clusters too much)
- Let the granola cool down completely before storing it in a airtight container
- Enjoy!

Not sure if the ingredients list is wrong. Very soggy granola. Not a good recipe.

This granola really did crisp up once it cooled of completely. Maybe I missed that in the instructions. It turned out to be a very nice granola.
