Description
Celebrate apple season with these healthy-ish apple caramel crumble bars! They are so tasty and easy to make! The bonus part – they are vegan, gluten-free and refined-sugar-free.

- 1 1/2 cups (150g) rolled oats
- 1 1/2 cups (130g) almond flour
- 1/4 cup (70g) pure maple syrup
- 1/2 cup (100g) coconut oil, melted and cooled
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 2 apples thinly sliced
- 1/4 cup (60ml) vegan caramel sauce
Instructions
- Preheat your oven to 350F and line a 9×9 pan with parchment paper.
- In a bowl, mix your oats, almond flour, baking powder and salt. Set aside.
- In a small bowl, whisk the melted coconut oil, maple syrup and vanilla extract. Pour the mixture into the dry ingredients and mix until fully combined.
- Press down in the pan about 2/3 of the oat mixture (spread it and make it flat with the help of your spatula) and bake for 15 minutes.
- While the crust is baking, thinly slice your apples.
- Layer the apples onto the baked crust, drizzle the caramel on top of the apples and sprinkle the rest of the crumble on top.
- Bake for another 25-30 minutes.
- Let the bars cool in the pan at room temperature for 20 minutes and then chill them for about 2 hours in the fridge. This will allow them to fully set.
Notes
For the apples, I like to use one honeycrisp and one granny smith apple. But you can use whichever kind you prefer.
