Let’s kickstart apple season with a delicious apple recipe! Remember those healthy strawberry and raspberry crumble bars I made in the summer, well today I’m introducing you to the fall version of this recipe aka apple caramel crumble bars!
These apple caramel crumble bars are simple and so easy to make. They consist of an oat crust layer, topped with sliced apples and caramel and finished with an oat crumble. The bonus part of this recipe: it is vegan, dairy-free, gluten-free and refined-sugar-free.
WHAT INGREDIENTS DO YOU NEED TO MAKE THESE APPLE CRUMBLE BARS?
For the oat crust and crumble:
- Oats: you’ll want to use rolled (or large flake) oats for this recipe.
- Almond flour: I like the flavour almond flour gives to baked goods; plus, it adds moisture and tenderness.
- Maple syrup: the bars are naturally sweetened with maple syrup.
- Coconut oil: the coconut oil is the source of fat in this recipe.
- Others: vanilla extract, baking powder and salt.
For the apple filling:
- Apples: I like to use one honey crisp and one granny smith apple.
- Vegan caramel sauce: you could use store-bought caramel sauce or make your own! I have a recipe for a vegan caramel sauce and it tastes so much better than store-bought!
HOW TO MAKE VEGAN APPLE CARAMEL CRUMBLE BARS?
In a bowl, mix your oats, almond flour, baking powder and salt, and set aside. In a small bowl, whisk the melted coconut oil, maple syrup and vanilla extract. Pour the mixture into the dry ingredients and mix until fully combined. Press down in a 9x9inch lined pan about 2/3 of the oat mixture (spread it and make it flat with the help of your spatula) and bake for 15 minutes at 350F.
While the crust is baking, thinly slice your apples. Layer the apples onto the baked crust, drizzle the caramel on top of the apples and sprinkle the rest of the crumble on top. Bake for another 25-30 minutes at 350F. Let the bars cool in the pan at room temperature for 20 minutes and then chill them for about 2 hours in the fridge. This will allow them to fully set.
Cut into 9 squares and serve with extra caramel on top (or even vanilla ice cream if you take care about the healthy part)!
HOW TO STORE THESE BARS?
Once the bars are cooled, cut them in 9 squares and store them in an airtight container in the fridge for up to 5 days.

- 1 1/2 cups (150g) rolled oats
- 1 1/2 cups (130g) almond flour
- 1/4 cup (70g) pure maple syrup
- 1/2 cup (100g) coconut oil, melted and cooled
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 2 apples thinly sliced
- 1/4 cup (60ml) vegan caramel sauce
Instructions
- Preheat your oven to 350F and line a 9×9 pan with parchment paper.
- In a bowl, mix your oats, almond flour, baking powder and salt. Set aside.
- In a small bowl, whisk the melted coconut oil, maple syrup and vanilla extract. Pour the mixture into the dry ingredients and mix until fully combined.
