Description

These brownie cookies won’t disappoint you! They are soft and chewy, super chocolatey and are amazing with a glass of milk.


Ingredients

  • 6 tbsp unsalted butter
  • 2 1/2 cups semi-sweet chocolate chips
  • 3 eggs
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp vanilla extract
  • 2/3 cup all-purpose flour
  • 1 tbsp cocoa powder
  • 1 tsp espresso powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk chocolate chips
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325F and line baking sheets with parchment paper
  2. Melt your butter and chocolate chips together in a microwave-safe bowl (stirring regularly)
  3. Let the mixture cool a little bit before adding the eggs, the sugars and the vanilla extract
  4. In a separate bowl, mix the flour, cocoa powder, espresso powder, baking soda, and salt
  5. Add the dry ingredients to the chocolate mixture
  6. Fold in the milk and semi-sweet chocolate chips
  7. Let the batter sit in the fridge for at least 30 minutes so the dough becomes easier to work with
  8. Scoop out the dough on the lined baking sheets and bake for 10-12 minutes
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack (they will fall apart if you don’t let them sit on the baking sheet for a few minutes)
