Description
These delicious bars consist of fresh strawberries and raspberries sandwiched between an oat crust and a generous crumble layer! These crumble bars are healthy, refined sugar free and dairy free. Truly an amazing and refreshing summer treat!

- 1 1/2 cup (150g) oats
- 1 1/2 cup (130g) almond flour
- 1/4 cup (70g) maple syrup + 2 tbsp (RT)
- 1/2 cup (100g) coconut oil (melted)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup (220g) strawberries (quartered)
- 1 1/2 cup (180g) raspberries
- 1 tbsp lemon juice
- 2 tbsp cornstarch
Instructions
- Preheat your oven to 350F and line a 8×8 pan with parchment paper.
- In a bowl, mix your oats, almond flour, baking powder and salt. Set aside.
- In a small bowl, whisk the melted coconut oil, 1/4 cup maple syrup and vanilla extract. Pour the mixture into the dry ingredients and mix until fully combined.
- Press down in the pan about 2/3 of the oat mixture (spread it and make it flat with the help of your spatula) and bake for 10 minutes.
- While the crust is baking, in a clean bowl mix your strawberries, raspberries, lemon juice, 2 tbsp maple syrup and cornstarch.
- Spread the fruit mixture onto the baked crust and sprinkle the rest of the crumble on top.
- Bake for another 25-30 minutes.
- Let the bars cool in the pan at room temperature for 20 minutes and then chill them for about 2 hours in the fridge. This will allow them to fully set.
Notes
I personally like to smash my strawberries and raspberries a bit so I get a mixture of fruit purée and chunks.
