Strawberry and raspberry season is here and I couldn’t be happier! They are my two favourite berries and I love including them in delicious desserts. There’s no better time than now for me to introduce you to my strawberry and raspberry crumble bars! I love them so much, I will definitely be making them all summer long.
These healthy strawberry and raspberry crumble bars are refined sugar free, dairy free and vegan, but trust me, you would never know! They make a fresh dessert, or snack, or breakfast (totally acceptable – healthy remember?!). They basically consist of a delicious oat crust, a layer of strawberries and raspberries in the middle and more oat crumble on top.
WHAT INGREDIENTS WILL YOU NEED FOR THESE CRUMBLE BARS?
Let’s take a closer look at the key ingredients you will need for this recipe:
The oat crust and crumble
- Oats: I’d recommend using rolled (also called large flake) oats for this recipe for the best texture. I love including oats in healthier treats for their health benefits. They are a healthy source of carbs, and are rich in fiber and antioxidants.
- Almond flour: I like baking with almond flour mostly for its taste. It also helps keep baked goods moist and tender, which is what I wanted for this crust and crumble mixture.
- Maple syrup: the crumble mixture is naturally sweetened with maple syrup.
- Coconut oil: coconut oil is my favourite substitute for butter. I prefer it over olive oil, which can often have a stronger taste in baked goods.
- Other ingredients you will need: vanilla extract, baking powder and salt
The fruit filling
- Fresh strawberries and raspberries: I used a combination of my two favourite berries for this recipe, but you could easily substitute with other fresh berries (like blueberries or blackberries) as long as your final volume of fruit is 3 cups (or about 400g).
- Lemon juice: lemon juice is acidic, which helps balance the sweetness of the fruit, and it also adds a note of freshness
- Cornstarch: adding a bit of cornstarch to the fruit helps thickening the juices
- Maple syrup: I included 2 tbsp of maple syrup for sweetness but I would adapt the quantities depending on how sweet your fruit are. If they are a bit more tart, add an extra tablespoon of maple syrup; and if they are really sweet, only add one tablespoon.
HOW TO MAKE THESE STRAWBERRY AND RASPBERRY CRUMBLE BARS?
These crumble bars are really easy to make! I’ve included pictures below with a step by step of how the layering is done. You can click on each picture for more details 😊
First, you’ll want to make the oat crumble mixture, which will be used for both the crust layer and crumble layer. Mix your oats, almond flour, baking powder and salt in one bowl. In a separate bowl, whisk your melted coconut oil, maple syrup and vanilla extract. Add the wet ingredients to the dry ingredients and mix. Once all the ingredients are combined, you will pack 2/3 of the crumble in an 8×8 pan lined with parchment paper, and bake at 350F for 10 minutes. This will ensure that your bottom layer is “strong” and doesn’t get mixed with the berry layer.
While the crust is baking, mix in a bowl your strawberries, raspberries, lemon juice, maple syrup and cornstarch. I personally like to smash the berries a little with my spatula to have a mix of fruit purée and some chunks.
Layer your berry mixture on top of the baked crust. Crumble the last third of the dough on top and bake for another 25 to 30 minutes. Let the bars cool a bit at room temperature and then chill them for about 2 hours in the fridge. This step is really important to have nice solid bars. Once completely cooled, remove the bars from the pan with the help of the parchment paper and cut them into 9 squares.
HOW TO STORE THESE CRUMBLE BARS?
Once cut, store the bars in an airtight container in the fridge for up to 5 days (that’s if they last this long). The bars might become a little more tender and soft after the first day, but they will still be as delicious!

Description
These delicious bars consist of fresh strawberries and raspberries sandwiched between an oat crust and a generous crumble layer! These crumble bars are healthy, refined sugar free and dairy free. Truly an amazing and refreshing summer treat!
Ingredients
- 1 1/2 cup (150g) oats
- 1 1/2 cup (130g) almond flour
- 1/4 cup (70g) maple syrup + 2 tbsp (RT)
- 1/2 cup (100g) coconut oil (melted)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup (220g) strawberries (quartered)
- 1 1/2 cup (180g) raspberries
- 1 tbsp lemon juice
- 2 tbsp cornstarch
Instructions
- Preheat your oven to 350F and line a 8×8 pan with parchment paper.
- In a bowl, mix your oats, almond flour, baking powder and salt. Set aside.
- In a small bowl, whisk the melted coconut oil, 1/4 cup maple syrup and vanilla extract. Pour the mixture into the dry ingredients and mix until fully combined.
- Press down in the pan about 2/3 of the oat mixture (spread it and make it flat with the help of your spatula) and bake for 10 minutes.
- While the crust is baking, in a clean bowl mix your strawberries, raspberries, lemon juice, 2 tbsp maple syrup and cornstarch.
- Spread the fruit mixture onto the baked crust and sprinkle the rest of the crumble on top.
- Bake for another 25-30 minutes.
- Let the bars cool in the pan at room temperature for 20 minutes and then chill them for about 2 hours in the fridge. This will allow them to fully set.
Notes
I personally like to smash my strawberries and raspberries a bit so I get a mixture of fruit purée and chunks.
