Description

This no-bake, vegan, healthy cookie dough energy bite recipe takes 10 minutes to make from start to finish. The perfect bite-sized snack!


Ingredients

Scale
  • 1/2 cup natural peanut butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp almond milk
  • 1/2 cup + 3 tbsp almond flour
  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips

Instructions

  1. In a food processor, blend the almond flour, rolled oats, chia seeds and salt
  2. In a bowl, combine the peanut butter, maple syrup, vanilla extract and almond milk
  3. Add the blended ingredients to the peanut butter mixture
  4. Fold in the mini chocolate chips
  5. Roll ~2 tbsp of dough in between the palm of your hands to form balls
  6. Store the cookie dough energy bites in an airtight container in the fridge
