Today, I’m bringing to you a little bite of goodness that taste like peanut butter chocolate chip cookie dough, ie. my cookie dough energy bite recipe! I personally love energy bites. They are a great nutritious snack for any time of the day. My boyfriend and I usually eat one or two on our way to the gym in the morning.
The main ingredient in these little bites is peanut butter, which is usually my go-to base when making energy bites. Using peanut butter involves fighting my dog to take pictures because she desperately wants a bite, but in this case it was worth it! The peanut butter really helps obtaining that cookie dough like texture. And the mini chocolate chips are probably my second favourite part of these balls. They add a little crunch in the otherwise soft texture.
My boyfriend (even though he might be a little bias) can attest to the deliciousness of these bites. He ate my good batch before I could take the pictures, so I had to make another one. But I won’t complain as I am currently eating one with my tea!
You can store the cookie dough energy bites in an airtight container for up to 2-3 weeks (that’s if they last that long).

Description
This no-bake, vegan, healthy cookie dough energy bite recipe takes 10 minutes to make from start to finish. The perfect bite-sized snack!
Ingredients
- 1/2 cup natural peanut butter
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tbsp almond milk
- 1/2 cup + 3 tbsp almond flour
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1/4 tsp salt
- 1/4 cup mini chocolate chips
Instructions
- In a food processor, blend the almond flour, rolled oats, chia seeds and salt
- In a bowl, combine the peanut butter, maple syrup, vanilla extract and almond milk
- Add the blended ingredients to the peanut butter mixture
- Fold in the mini chocolate chips
- Roll ~2 tbsp of dough in between the palm of your hands to form balls
- Store the cookie dough energy bites in an airtight container in the fridge

These are surprisingly filling!! I needed an easy snack to eat between breakfast and lunch and these energy balls were quite filling! I actually felt like I got a boost of energy from them. Sometimes I add some chopped up dates to these and it’s also super tasty.
