It is officially cookie season – the best season of the year! So let’s start the month of December off the right foot with the best soft and chewy brownie cookies you’ll ever have! It is a bold statement, yes. But honestly I’m addicted to them. And I am not the only want! A few weeks ago I brought them to work and they were gone in just a few minutes.
The cookies are super chewy, chocolatey and literally melt in your mouth. I call them “brownie” cookies because their texture is similar to the one of brownies but in a cookie. There’s not only cocoa powder in them but also real melted chocolate, which is what makes these cookies extra soft and chewy. And to make them extra chocolatey, I also added milk and semi-sweet chocolate chips. So good! I’d recommend eating them with a glass of milk, and of course dunking them in it!
Since it is the holiday season, they would be the perfect cookies to bring to your coworkers, holiday parties, family events or you could even gift them! Everybody will thank you, from the cookie-addict to the brownie lover. I will definitely be making several batches this month for holiday parties and for myself of course 😋

Description
These brownie cookies won’t disappoint you! They are soft and chewy, super chocolatey and are amazing with a glass of milk.
Ingredients
- 6 tbsp unsalted butter
- 2 1/2 cups semi-sweet chocolate chips
- 3 eggs
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp vanilla extract
- 2/3 cup all-purpose flour
- 1 tbsp cocoa powder
- 1 tsp espresso powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup milk chocolate chips
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 325F and line baking sheets with parchment paper
- Melt your butter and chocolate chips together in a microwave-safe bowl (stirring regularly)
- Let the mixture cool a little bit before adding the eggs, the sugars and the vanilla extract
- In a separate bowl, mix the flour, cocoa powder, espresso powder, baking soda, and salt
- Add the dry ingredients to the chocolate mixture
- Fold in the milk and semi-sweet chocolate chips
- Let the batter sit in the fridge for at least 30 minutes so the dough becomes easier to work with
- Scoop out the dough on the lined baking sheets and bake for 10-12 minutes
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack (they will fall apart if you don’t let them sit on the baking sheet for a few minutes)
