Well Day 5 of Cookie Week almost didn’t happen over here on the blog… If you follow me on instagram, you may know that I was having some issues with the blog today and I didn’t think I was going to be able to publish today’s recipe. But thanks to the help of fellow bloggers, I am here to share with you what may be the bf’s new favourite recipe on the blog, aka my salted caramel and white chocolate chip cookie skillet recipe!
The cookie recipe itself is very simple, but the white chocolate chips and the salted caramel are the two elements that take this cookie to the next level! I used homemade salted caramel for this cookie skillet and poured the caramel in the middle of the cookie. This results in a delicious gooey centre! And I mean look at this salted caramel 👇🏼How can you resist?!
The recipe is for a small skillet, which makes it the perfect size to share with your SO on a date night at home, or with your bestie during a cozy Christmas movie marathon, or of course, you could just devour it by yourself! Because yes, once you have a bite, it will be hard to put the spoon down!

Description
A small cookie skillet recipe with a combination of white chocolate chips and homemade salted caramel! Perfect treat to share, or not… 😉
Ingredients
- 1/4 cup melted butter
- 1/4 cup dark brown sugar
- 2 tbsp granulated sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/4 tsp baking soda
- pinch of salt
- 1/4 cup white chocolate chip
- 2 tbsp salted caramel (to make your own: 1 cup granulated sugar, 5 tbsp salted butter, 3/4 cup heavy cream, 1 tsp sea salt)
Instructions
- For the salted caramel: place the sugar in a pot and melt it on medium-high. Once it has a nice amber colour, add the butter and stir constantly. As soon as the butter is melted, add the cream while stirring. Let the mixture boil for 1 minute and remove the pan from the heat. Add the sea salt, stir and let the caramel cool
- Preheat your oven to 350F and butter your small skillet
- Mix your melted butter with the sugars
- Add the egg yolk, and the vanilla extract
- Combine the flour, baking soda and salt to the wet ingredients
- Fold in the white chocolate chips
- Take half the dough and spread it at the bottom of the skillet. Pour the 2 tbsp of salted caramel in the centre and let it spread itself (you want to avoid having the caramel too close to the edges of your skillet). Cover with the rest of the dough
- Bake the cookie for 18-20 minutes
- Enjoy warm with extra salted caramel, vanilla ice cream or whipped cream! (or all 3)
